Roaring Roasted Okra
- 12-16 oz. fresh small okra (if using frozen, thaw, blot dry)
- Extra virgin olive oil
- ½ t. ground coriander
- ½ t. ground cumin
- ½ t. smoked paprika
- ½-1 t. red pepper (depending on how peppery you like it)
- ½-1 t. kosher salt
- Lemon wedges, garnish
- Ranch Dressing or your favorite dipping sauce
- Preheat oven 450.
- Toss the okra with the olive oil to coat.
- In a bowl, combine the seasonings.
- Toss the okra in the seasoning and shake off excess.
- Spread the okra on a baking sheet that has been lined with foil and sprayed with PAM.
- Roast in oven for 12-15 minutes or until tender, turning once.
- Remove from oven and sprinkle with paprika.
- Serve with your favorite dipping sauce and squeezes of fresh lemon.
