Frozen Chocolate Covered Banana Pops

Ingredients
  • 4 medium ripe but firm bananas
  • 8 wooden craft sticks or popsicle sticks
  • ½ c. chopped nuts like salted peanuts, walnuts, pecans, etc.
  • 8 oz. good quality dark chocolate (60-70 percent cocoa solids), chopped
Instructions
  1. Peel, then cut each banana in half crosswise and insert the wooden stick into each half.
  2. Place on a tray, cover with plastic wrap and place in freezer until frozen.
  3. Place the chopped nuts in a shallow dish.
  4. Melt chocolate in top of double boiler over slightly simmering water, over lowest heat, stirring frequently.
  5. Pour melted chocolate in tall glass.
  6. Dip each frozen bananas into chocolate, either halfway or all the way, turning to coat it.
  7. Immediately roll in nuts.
  8. Place on tray covered with wax paper.
  9. Serve immediately or wrap in plastic wrap and freeze up to 2 weeks.
