Beer Cheese and Crackers
- 1 lb. good quality yellow sharp cheddar cheese, like Wisconsin
- 1 large garlic clove, smashed
- 1 T. Worcestershire sauce
- ½ t. ground mustard
- Black and red pepper to taste
- ¾ c. Hefeweizen wheat beer
- Assorted crackers or pretzel sticks
- In food processor fitted with coarse shredder attachment, grate cheese.
- Remove shredder attachment and add regular blade.
- Add garlic, Worcestreshire, mustard, red and black pepper. Pulse to combine.
- With processor running, slowly add beer, blending until a smooth mixture forms.
- Transfer the beer cheese to serving bowl and cover with plastic wrap.
- Place in refrigerator overnight or at least 4 hours. The longer it sits the better the flavors become.
- Serve with crackers and pretzels.
