Marvelous Crabmeat Bread Pudding
- 1 stick butter, softened, plus more for greasing baking dish
- 1 lb. lump crabmeat, picked over
- 2 T. finely chopped parsley
- 1 T. finely chopped chives
- 1 T. fresh lemon juice
- Kosher salt, red/black pepper to taste
- 1 (24”) day old baguette, ends trimmed, bread cut into ¾” slices
- 4 large eggs
- 1 c. milk
- 1 c. half and half
- Paprika
- Preheat oven 350 and butter 9x13” ceramic baking dish.
- In bowl, toss crabmeat with parsley, chives, lemon juice and seasonings.
- Butter each baguette and stand the slices in prepared baking dish.
- Using a spoon, tuck crab mixture evenly between slices of bread.
- In bowl, whisk eggs with milk, half and half, 1 t. salt and 1 t. black pepper.
- Pour the egg mixture evenly over bread and let set for 15 minutes. Dust with paprika.
- Bake pudding for 30 minutes until top is lightly browned and custard is set.
- Let stand for 10 minutes before serving.
*****You can sub other seafoods or meats, they must be cooked before adding to mixture.
