Crispy Parmesan Zucchini Chips
- PAM
- 2-3 medium fresh zucchini
- Olive oil
- Salt, black pepper
- ½ c. freshly grated parmesan cheese
- ½ c. seasoned bread crumbs
- Ranch or Blue Cheese Dressing, optional
- Preheat oven 450.
- Line a baking sheet with foil and spray with PAM.
- Slice the zucchini into ¼” thick rounds.
- Toss the rounds in olive oil and season with salt and pepper.
- In a bowl, combine the parmesan cheese and bread crumbs.
- Dip each round into the parmesan mixture, coating evenly on both sides.
- Pressing the coating to stick and place in single layer on the baking sheet.
- Bake until browned and crisp, about 25-30 minutes.
- Remove from oven and serve immediately.
*****You can use your favorite dressing as a dipping sauce.
