Ingredients
  • PAM
  • Olive oil
  • ½ c. chopped celery
  • ½ c. chopped green pepper
  • ½ c. chopped onion
  • 1 (16-oz.) pkg. fresh or frozen baby lima beans, thawed
  • 1 c. diced tomato
  • 1 c. hot spicy hot vegetable juice cocktail or bloody mary mix
  • 1 t. crushed red pepper
  • Salt and black pepper to taste
Instructions
  1. Coat large skillet with PAM and then drizzle bottom with olive oil.
  2. Over medium-high heat, add celery, onion and pepper and sauté until tender.
  3. Add beans and remaining ingredients. Bring to a boil and cover and reduce heat and simmer for 12-15 minutes or until beans are tender. Taste for seasoning.
