Ingredients
  • 1 (14.1-oz.) package refrigerated piecrusts
  • ½ of (16-oz.) package thick-cut bacon, cut into ⅛” pieces
  • 2 c. extra sharp grated cheddar cheese
  • ¼ c. chopped fresh chives
  • 3 T. flour
  • 1 t. salt
  • 1-2 t. black pepper
  • ½ c. milk
  • 2 large eggs
  • 8 oz. package crawfish tails, chopped
Instructions
  1. Preheat oven 375. Unroll piecrusts on lightly floured board.
  2. Cut 24 (3 ½”) circles from crust and press into 24 mini muffin cups.
  3. Prick sides and bottom of crusts with fork.
  4. In skillet, cook bacon until crisp. Drain and crumble the bacon.
  5. In bowl, combine bacon, cheese, chives, flour, salt, pepper, milk and eggs.
  6. Whisk to blend.
  7. Gently fold in crawfish and combine.
  8. Divide mixture evenly among the crusts.
  9. Bake until lightly golden and puffy, about 12-15 minutes. Serve warm.
Notes
*****You can semi-bake them, cool and place in zip-lock bags and freeze. To serve, thaw in refrigerator, place in baking dish and cook until hot.
