Corny Dog Muffins
Ingredients
- 1 ear of fresh yellow corn
- 1 (8.5-oz.) box corn muffin mix
- 1 egg
- ⅓ c. milk
- 1c. grated sharp cheddar cheese
- 4 hot dogs, each cut into 6 (1”) pieces
- Pam
- Catsup, mustard, relish-condiments
Instructions
- Preheat oven 375.
- Remove the corn kernels from cob and place in a bowl.
- In another mixing bowl, combine the muffin mix, egg and milk. Batter will be lumpy but mix well.
- Add the corn, cheese and mix into the muffin mixture.
- Let batter sit for 5 minutes.
- Grease or spray Pam into 24 mini cup muffin pan.
- Put about 1 T. of batter into each cup.
- Place a single hot dog piece into center of batter, standing straight up.
- Bake for 12-15 minutes or until cooked through.
- Remove from oven and let rest 5 minutes.
- Remove and place on platter and serve with your favorite condiments.
