Ingredients
  • 12-14 pieces of chicken (I used 6 legs, 8 thighs)
  • BRINE:
  • 1 c. brown sugar
  • 1 c. kosher salt
  • 8 c. hot water
  • 8 c. ice
  • 1. Dissolve the sugar and salt in hot water and then add ice to cool the mixture down.
  • 2. Set chicken pieces into the brine and refrigerate from 2-6 hours.
  • 3. Drain. Pat dry. Season with salt, red/black pepper and garlic powder. Not too heavy on salt since it was in a brine. Set aside.
  • 1 (16-oz.) box whole wheat bran flakes, crushed finely-you will need 3 c. of the cereal.
  • 3 c. seasoned bread crumbs
  • 1 c. flour, seasoned
  • 3 c. low-fat buttermilk
  • 3 eggs, beaten
  • Salt, red/black pepper
Instructions
  1. In a shallow dish, combine the cereal and bread crumbs. Season lightly.
  2. In another shallow dish, place the seasoned flour.
  3. In another shallow dish, whisk the milk and eggs together. Season lightly.
  4. Take two baking sheets and line with foil and spray with PAM.
  5. Place a wire rack on each baking sheet. Spray rack with PAM.
  6. Dredge chicken pieces in flour, then dip in egg mixture and then roll in cereal mixture. Pressing it onto the chicken.
  7. Place on the wire rack, leaving space between the pieces.
  8. Bake at 375 for 1 ½ to 2 hours or until chicken is golden in color. No need to turn the pieces. You can insert instant thermometer and make sure internal temperature is at least 165.
  9. Remove from oven and let sit for 5 minutes. Serve.
Notes
*****You can vary the cereal you like for the coating and also use just plain bread crumbs but you will have to season more. Cooking time will depend on the size of the chicken pieces. These pieces I used were fairly large so they took longer to cook but had no problem with them burning. I asked HUBBY on a scale of 1-10 how would it rate compared to REAL FRIED CHICKEN—He said an “8”! I will take that because you know you can’t beat REAL FRIED CHICKEN! We all enjoyed it.
