Ingredients
  • 4-6 large, boneless chicken breasts, seasoned
  • Flour
  • Olive oil
  • 1 (16-oz.) container of chopped onion mix
  • 3 T. minced garlic
  • 1 of each color bell pepper (red, yellow, orange, green), seeded and cut into strips
  • 1 (8-oz.) container sliced mushrooms
  • 1 (14. 5 oz.) can diced tomatoes, do not drain
  • 1 (4-oz.) jar chopped pimentos, do not drain
  • 8 c. fresh tomatoes, pureed
  • ½ c. white wine or vermouth
  • 4 bay leaves
  • 1 t. dried thyme
  • 1 t. dried oregano
  • 1 t. dried basil
  • ½ c. sugar
  • 1 (6-oz.) can tomato paste
  • Hot cooked pasta, your favorite (For this dish, I prefer the medium egg noodles.)
  • Freshly grated parmesan cheese
  • Fresh chopped parsley
  • Salt, black pepper, garlic powder
Instructions
  1. Season chicken with salt, pepper and garlic powder.
  2. Dredge the chicken in flour that has some salt and pepper added to it. Shake and coat chicken well and shake off excess.
  3. Drizzle enough olive oil in large roasting pot to cover the bottom and heat.
  4. Add chicken and brown on both sides. Remove chicken and drain and keep covered to keep warm.
  5. To the pot add the onion and garlic and saute until tender.
  6. Stir in the pimento, diced tomato, tomato paste and sugar. Saute for another 5-8 minutes.
  7. Add the pureed tomatoes, mushrooms, bay leaves, thyme, oregano, basil and wine or vermouth. Stir to mix well.
  8. Let the mixture cook for about 5-8 minutes, stirring occasionally.
  9. Add the chicken in, bring to boil, reduce heat, uncovered for 30 minutes. Stir occasionally. Taste for seasoning.
  10. Stir in bell pepper strips and cook another 30 minutes over low heat. Stir occasionally.
  11. Taste for seasoning again.
  12. Serve over hot pasta, sprinkle with cheese and fresh parsley.
Notes
*****When I made this dish, I had fresh Creole tomatoes. If you do not have very tasty tomatoes, increase the canned diced tomatoes to make up the difference. I also at the time had some pasta mixed with some fresh corn kernels and shrimp. I just served this dish over that pasta.
