Ingredients
  • 4 (1/2” thick) boneless pork loin chops
  • Salt and black pepper
  • 4 slices bacon
  • PAM
  • ¼ c. Ancho Base
  • ¾ c. whipping cream

Instructions
  1. Season chops and wrap a piece of bacon around each one. Secure with toothpicks.
  2. Spray PAM on grill which is at 300-350 degrees. Place chops on grill and cook with grill cover on it for about 8 minutes on each side or until done.
  3. Combine ¼ c. Ancho Base and whipping cream in saucepan, whisk until smooth.
  4. Bring to boil, whisking constantly. Reduce heat and simmer, keep whisking for 5 minutes or until thick.
  5. Spoon sauce onto plate and top with pork chop.

Ingredients
  • 3 dried ancho chile peppers
  • 4 oz. dried tomatoes
  • 3 T. minced garlic
  • ½ c. chopped onion
  • 4 beef-flavored bouillon cubes
  • 1 T. dried oregano
  • 1 T. brown sugar
  • 2 T. Worcestershire sauce
  • ¼ c. tomato paste
  • 1 ½ c. water

Instructions
  1. Combine all ingredients in saucepan. Bring to boil, reduce heat and simmer 10 minutes, stirring occasionally. Cool 15 minutes.
  2. Place in food processor and add the pepper mixture. Process until smooth, stopping often to scrape down sides. Chill up to 1 week or freeze for 3 months.
