Avocado and Shrimp Salsa

Ingredients
  • 1 lb. medium cooked shrimp, chopped (can be boiled or sauted)
  • 1 c. fresh salsa or pico de gallo
  • 1-2 fresh jalapenos, seeded and minced
  • ½ red onion, minced
  • 2 fresh avocados, diced
  • Juice of 2 limes
  • ½ pint variety colored cherry tomatoes, halved
  • Olive oil
  • Salt, black pepper

Instructions
  1. In a bowl, combine the jalapenos, red onion and avocados. Mix well.
  2. Add the fresh lime juice.
  3. Drizzle with olive oil. Season with salt and pepper.
  4. Add the salsa and shrimp. Mix well.
  5. Add the tomatoes. Mix well.
  6. Taste for seasoning.
  7. Place in serving dish and serve with veggies, chips or crackers.
  8. Garnish with extra tomatoes and slice of lime.

Notes
*****Be sure to taste after each addition. The peppery part will depend on how many jalapenos you put in, how hot your salsa is and how seasoned your shrimp are. So be careful when seasoning.
