Ingredients
  • 3-4 medium fresh yellow squash, sliced
  • 1 (8-oz.) bag fresh sugar snaps
  • Sea salt, black pepper, garlic powder
  • Red pepper flakes
  • Extra virgin olive oil
  • Soy sauce
  • Juice of 2 lemons

Instructions
  1. In 9×13” baking pan, spray with PAM.
  2. Place the squash and sugar snaps in dish.
  3. Drizzle with olive oil and season with salt, pepper and garlic powder. Mix well.
  4. Spread veggies evenly in pan.
  5. Drizzle with soy sauce and pour lemon juice all over. Mix well.
  6. Sprinkle with red pepper flakes.
  7. Roast in 350 oven for 15-20 minutes. You want veggies to be tender but not mushy. You do want the sugar snaps to be crispier than the squash.

Notes
*****This is a good combination of textures. Typically squash is softer but he contrast with the crispy sugar snaps is a nice change.
