  • 2 c. gingersnap cookie crumbs
  • 7 T. melted butter
  • ¼ c. sugar
  • 1⅔ c. sugar
  • 2 c. flour
  • 2 t. ground cinnamon
  • 2 t. baking powder
  • 1 t. baking soda
  • 1 t. salt
  • 4 eggs
  • 1 can pumpkin puree
  • 1 c. vegetable oil
  • 1 can cream cheese frosting
  • Decorative sprinkles

  1. Preheat oven 350. Line a 15×11” baking pan with foil. Set aside.
  2. In small bowl, mix gingersnap crumbs, butter and ¼ c. sugar until well combined.
  3. Spread mixture into baking pan and form an even crust.
  4. Bake crust until fragrant about 6 minutes. Let cool completely.
  5. In another bowl, combine flour, cinnamon, powder, soda and salt.
  6. In another bowl, beat eggs and 1⅔ c. sugar. Add pumpkin and oil. Mix well.
  7. Stir in flour mixture to the pumpkin mixture.
  8. With a rubber spatula, spread pumpkin mixture evenly over cooled crust.
  9. Bake until filling pulls away from pan, about 25-30 minutes. Let cool completely.
  10. Frost top of cool cake and decorate with sprinkles.
  11. Cut into bars.

*****My neighbor Carla, brought these to me. They are fabulous. The gingersnaps add so much flavor to this dessert. You can change the sprinkles to fit the holiday! You will love this!
