Ingredients
  • ¼ c. butter
  • 2 c. self-rising cornmeal
  • ½ c. flour
  • 2 ½ c. buttermilk
  • 2 large eggs, lightly beaten
  • 1 c. cracklings

Instructions
  1. Place butter in 9” cast-iron skillet and heat in 425 oven for 5 minutes.
  2. In a large bowl, combine cornmeal and flour, making a well in center.
  3. Stir together buttermilk, eggs and cracklings.
  4. Add dry ingredients, stirring just until moistened.
  5. Pour over melted butter in hot skillet.
  6. Bake for 25-30 minutes or until golden brown.

Notes
*****If you live in an area where cracklings are not available, you can substitute 1 c. cooked and crumbled bacon.
