Ingredients
  • 2-3 lbs. fresh, large shrimp, peeled (leave tail on, if desired)
  • 3 T. minced garlic
  • 1 (8-oz.) container fresh pico del gallo or freshly diced ripe tomato
  • 1 t. red pepper flakes
  • ¼ c. fresh lemon juice
  • Good quality extra virgin olive oil
  • ¼ c. white wine
  • Sea salt, fresh black pepper
  • Freshly chopped parsley, garnish

Instructions
  1. Preheat oven 375.
  2. In a bowl, season shrimp with salt, pepper and pepper flakes.
  3. Add the garlic, pico or tomato, lemon juice and white wine.
  4. Drizzle olive oil to coat.
  5. Mix well.
  6. Spray skillet with PAM and drizzle a little olive oil in bottom to coat.
  7. Place the shrimp mixture into the skillet and spread out.
  8. Bake for 10-12 minutes or until pink or done (depending on size of shrimp.)
  9. Remove from oven and garnish with parsley.

Notes
*****Serve with a nice crusty bread for dipping.
