Ingredients
  • 1 T. vanilla
  • 1 T. baking soda
  • 1 t. salt
  • 1 ½ sticks butter
  • 3 c. sugar
  • 1 c. light corn syrup
  • ½ c. water
  • 3 c. shelled raw peanuts
  • 1 (16-oz.) bag of chocolate chips or bars, to melt and dip brittle in
  • 2-4 T. shaved wax

Instructions
  1. Measure the vanilla and place in a bowl and set aside.
  2. Combine baking soda and salt in another bowl and set aside.
  3. Butter a baking sheet (bottom and sides) with ½ stick butter. Set aside.
  4. Combine sugar, corn syrup and ½ c. water in a large saucepan.
  5. Bring to a boil, place a candy thermometer into the mixture. Cook over medium-high heat until syrup spins a thread when poured from a spoon (240 degrees) on the thermometer.
  6. Stir in peanuts and continue cooking and stirring until mixture reaches 300 degrees and becomes golden brown.
  7. Remove from heat immediately and quickly add the 1 stick of butter and vanilla, baking soda and salt. Stir only until butter melts.
  8. Quickly pour onto baking sheet, spreading mixture thinly.
  9. When brittle is completely cooled, break into pieces or cut into bars. Store in tightly covered container.
  10. In a double boiler, melt the chocolate chips or bars. Add the wax and stir. Dip one end of the brittle into the chocolate and lay on wax paper until it hardens. I like to do half of them and leave some of brittle without chocolate. You can vary sauces like butterscotch, etc.
