Family Favorite Chicken, Brown Rice and Broccoli Casserole

Ingredients
  • 2 (3 /12-oz.) bags boil in bag brown rice
  • Olive oil
  • 1 c. finely chopped onion
  • 1 (8-oz.) container sliced mushrooms
  • 8 oz. skinless, boneless chicken thighs, cut into bite-size pieces, season
  • Salt, black pepper
  • 1 (12-oz.) bag microwave-in-bag fresh broccoli florets
  • 1 ½ c. low fat milk
  • 3 T. flour
  • 1 c. shredded sharp cheddar cheese

Instructions
  1. Preheat broiler to High.
  2. Cook rice according to package directions, drain.
  3. While rice cooks, heat a large 12” ovenproof skillet over medium heat.
  4. Add oil to cover bottom. Swirl to coat.
  5. Add onion, mushrooms and chicken.
  6. Cook until chicken and onions are done.
  7. Cook broccoli for 3 minutes in microwave. Open to release steam.
  8. Combine milk and flour and whisk until smooth.
  9. Stir milk mixture into chicken mixture in skillet.
  10. Cook until bubbly and thick, stirring frequently, about 2-3 minutes.
  11. Stir in rice and broccoli. Season to taste.
  12. Sprinkle with cheese.
  13. Place in broiler for 1 minute or until cheese melts and just begins to brown.

Notes
*****You can change veggies to cauliflower, spinach, peas, carrots or green beans. You can also use ground beef instead of chicken. You can also use 3 c. cooked quinoa instead of rice.
