Oven-Baked Green Tomatoes and Zucchini

Ingredients
  • ½ c. buttermilk
  • 1-2 t. Tabasco
  • 1 egg white
  • 1 c. cornmeal
  • Sea salt, black pepper
  • 2 large green tomatoes, cut into ¼” slices
  • 1-2 zucchini cut into ¼” slices
  • PAM
  • Zesty Ranch Dressing or Blue cheese Dressing or Marinara Sauce

Instructions
  1. Preheat oven 450.
  2. Line a baking sheet with parchment paper.
  3. Combine buttermilk, Tabasco, egg white in a shallow dish.
  4. Mix the cornmeal with salt and pepper in another dish.
  5. Season the tomatoes and zucchini slices.
  6. Dip the tomato and zucchini slices into the buttermilk mixture and then the cornmeal mixture. Gently turn to coat both sides.
  7. Spray a large nonstick skillet with PAM. Place over medium heat. Add half of the tomato and zucchini slices in a single layer and cook until browned on both sides, about 2-3 minutes. Wipe out skillet and do remaining slices the same.
  8. Transfer slices to the baking sheet and bake until the tomatoes and zucchini are golden brown on both sides.
  9. Serve hot with your favorite dipping sauce.
