Ingredients
  • 1 dozen large eggs
  • 1 (5-oz.) bag jalapeno potato chips, lightly crushed
  • ¼ c. olive oil
  • 1 (1/2 lb.) ham steak, cut into ½” diced pieces
  • 3 green onions, chopped

Instructions
  1. Preheat broiler and put rack about 8” from heat.
  2. In large bowl, beat eggs. Add chips and mash to break them up.
  3. In large nonstick skillet, heat olive oil. Add ham and green onions and cook for 1 minute.
  4. Add eggs and cook until set on the bottom and side.
  5. Broil the tortilla until top is lightly browned and eggs are set, about 2 minutes.
  6. Slide tortilla onto a plate and cut into wedges and serve.

Notes
*****Try using the sweet potato chips or other favorite chips for a change up in flavors. Also you can sprinkle with your favorite type of shredded cheese that can be added right at the end while under broiler.
