Bacon Flavored Mashed Potatoes

Ingredients
  • 4 lbs. Yukon God potatoes, peeled and cut into 1” pieces
  • Salt
  • ½ lb. thick-cut bacon, finely diced
  • 1 large red onion, finely chopped
  • ¼ c. apple cider vinegar
  • 3 T. whole-grain mustard
  • 1 t. celery seeds
  • 1 ½ sticks butter
  • 1 ¼ c. milk
  • 1 c. Miracle Whip or mayo
  • ¼ c. finely chopped parsley
  • Fresh black pepper, salt

Instructions
  1. In large pot, place potatoes in cold salted water and bring to boil, then simmer and cook until tender but not mushy. Drain in colander and shake off excess liquid.
  2. In large skillet, cook bacon until crisp.
  3. With slotted spoon, remove bacon and place on paper towels to drain. Drain off but 2-3 T. of the bacon fat.
  4. Add the onion to the bacon fat and cook until just before starting to brown.
  5. Add vinegar, mustard and celery seeds. Cook until most of the liquid is absorbed.
  6. In large saucepan, melt butter in milk.
  7. Press potatoes through a ricer into the pot of milk and mix well.
  8. Fold in mayo, bacon, onion mixture and parsley. Season with salt and pepper.
  9. Serve right away.
