Ingredients
  • 2 eggs
  • 1 t. soy sauce
  • 1 t. toasted sesame oil
  • 1 T. vegetable oil
  • 1 T. minced garlic
  • 1 t. minced fresh ginger
  • 2 c. shredded green cabbage
  • 1 c. frozen shelled edamame, thawed
  • ½ c. frozen peas, thawed
  • 2 c. cooked brown rice, chilled
  • 2 T. soy sauce
  • 2 green onions, sliced
  • Crushed red pepper, optional

Instructions
  1. In small bowl, beat eggs and 1 t. soy sauce.
  2. In wok or large skillet, heat sesame oil.
  3. Add eggs, stir gently until set.
  4. Remove eggs, cool slightly. Cut eggs into strips.
  5. In same skillet, heat vegetable oil.
  6. Add garlic and ginger. Stir and cook 30 seconds.
  7. Add cabbage and cook 2 minutes.
  8. Add edamame and peas and cook and stir another 2 minutes.
  9. Add rice and 2 T. soy sauce. Cook and stir 2-4 minutes or until heated.
  10. Add egg strips and green onion. Cook and stir 1 minute.
  11. If desired, top with sprinkles of crushed red pepper.
