Basil Pesto Roasted Asparagus

Ingredients
  • 1 lb. fresh asparagus, washed and woody stems removed
  • Kosher salt, black pepper, garlic powder, lemon pepper
  • 1 (5-oz.) jar basil pesto
  • 1 (6-oz.) container fresh pico de gallo
  • Juice of 2 lemons
  • Zest of 1 lemon

Instructions
  1. In a shallow baking dish, place the washed and stemmed asparagus in bottom.
  2. Drizzle the basil pesto all over the asparagus. With your hands, try to rub the pesto all over the asparagus.
  3. Season with salt, pepper, garlic powder and lemon pepper.
  4. Run the pico down the center of the asparagus.
  5. Squeeze the lemon juice all over the dish.
  6. Sprinkle the lemon zest all over the dish.
  7. Roast in 350 oven for 12-15 minutes, depending on thickness of asparagus. You want them sort of crispy but not tough or soggy.
