Ingredients
  • 4-6 medium red potatoes
  • Extra virgin olive oil
  • 1 bunch chopped fresh parsley
  • 1 bunch chopped chives
  • 1 T. minced garlic
  • 1 T. lemon zest
  • 2 T. fresh lemon juice
  • Salt, black pepper
  • 1 medium jar, diced pimento, drained, optional garnish

Instructions
  1. Preheat grill. Boil potatoes in salted water until almost tender, do not overcook.
  2. Drain potatoes and place in bowl of ice water to stop the cooking.
  3. Slice the cooled potatoes into ½” rounds.
  4. Brush both sides of potatoes with olive oil and season.
  5. Place on hot grill until grill marks form on each side.
  6. In bowl, mix together 3 T. olive oil, parsley, chives, garlic, zest and juice.
  7. To serve, shingle the potatoes so that one piece overlaps the next.
  8. Sprinkle with a little more salt and pepper if needed.
  9. Generously spoon the herbs over the top. Serve.
  10. For added color, top the herbs with the diced pimento.
