GRILLED CORN LAYERED SALAD
 
GRILLED CORN LAYERED SALAD

Ingredients
  • 8-10 fresh ears of corn, husks removed
  • ¼ c. good quality olive oil
  • Salt, black pepper
  • 1 t. crushed red pepper flakes
  • 1 pt. cherry tomatoes, halved or 2 large tomatoes, chopped
  • 1 medium red onion, thinly sliced
  • 12 fresh basil leaves, thinly sliced
  • 1 c. Zesty Italian dressing

Instructions
  1. Brush corn with oil. Grill corn, cover, for medium heat 10-12 minutes or until lightly browned and tender. Turn occasionally. Cool slightly.
  2. Cut corn from cobs and place in bowl.
  3. Stir in salt, pepper and flakes.
  4. In 2 qt. glass bowl, layer a ⅓ of each of the following: corn, tomatoes, onion and basil.
  5. Repeat layers twice.
  6. Pour dressing over top and refrigerate for at least 1 hour.
