Ingredients
  • 2 (6-oz.) pkgs. long grain and wild rice mix
  • 3 T. butter
  • 1 large Vidalia onion, diced
  • 12 oz. assorted fresh mushrooms, trimmed and sliced
  • Salt, black pepper to taste
  • ½ c. Marsala
  • ½ c. chopped fresh parsley

Instructions
  1. Prepare rice according to pkg. instructions.
  2. Melt butter in large skillet over medium heat.
  3. Add onion and cook until golden.
  4. Add mushrooms and season with salt and pepper. Cook until tender.
  5. Add Marsala and cook until liquid is absorbed.
  6. Stir mushroom mixture and parsley into prepared rice.
  7. Taste for seasoning.
