Crispy Parmesan Zucchini Chips

Ingredients
  • PAM
  • 2-3 medium fresh zucchini
  • Olive oil
  • Salt, black pepper
  • ½ c. freshly grated parmesan cheese
  • ½ c. seasoned bread crumbs
  • Ranch or Blue Cheese Dressing, optional

Instructions
  1. Preheat oven 450.
  2. Line a baking sheet with foil and spray with PAM.
  3. Slice the zucchini into ¼” thick rounds.
  4. Toss the rounds in olive oil and season with salt and pepper.
  5. In a bowl, combine the parmesan cheese and bread crumbs.
  6. Dip each round into the parmesan mixture, coating evenly on both sides.
  7. Pressing the coating to stick and place in single layer on the baking sheet.
  8. Bake until browned and crisp, about 25-30 minutes.
  9. Remove from oven and serve immediately.

Notes
*****You can use your favorite dressing as a dipping sauce.
