Marvelous Crabmeat Bread Pudding

Ingredients
  • 1 stick butter, softened, plus more for greasing baking dish
  • 1 lb. lump crabmeat, picked over
  • 2 T. finely chopped parsley
  • 1 T. finely chopped chives
  • 1 T. fresh lemon juice
  • Kosher salt, red/black pepper to taste
  • 1 (24”) day old baguette, ends trimmed, bread cut into ¾” slices
  • 4 large eggs
  • 1 c. milk
  • 1 c. half and half
  • Paprika

Instructions
  1. Preheat oven 350 and butter 9×13” ceramic baking dish.
  2. In bowl, toss crabmeat with parsley, chives, lemon juice and seasonings.
  3. Butter each baguette and stand the slices in prepared baking dish.
  4. Using a spoon, tuck crab mixture evenly between slices of bread.
  5. In bowl, whisk eggs with milk, half and half, 1 t. salt and 1 t. black pepper.
  6. Pour the egg mixture evenly over bread and let set for 15 minutes. Dust with paprika.
  7. Bake pudding for 30 minutes until top is lightly browned and custard is set.
  8. Let stand for 10 minutes before serving.

Notes
*****You can sub other seafoods or meats, they must be cooked before adding to mixture.
