Ingredients
  • 2 heads of fresh broccoli, cut into florets
  • 2 large red bell pepper, cut into bite-size pieces
  • 3 T. minced garlic
  • 1 T. sesame oil
  • 1 T. olive oil
  • Salt and black pepper

Instructions
  1. Preheat oven 425. Place veggies, not the garlic, on baking sheet that has been sprayed with PAM.
  2. Season with salt and pepper and drizzle with the olive oil and sesame oil. Toss with your hands to coat all veggies.
  3. Roast 15-20 minutes until browned. Half way through the cooking process toss in the garlic and stir the veggies and finish cooking.

dressing for ASIAN ROASTED BROCCOLI AND PEPPERS

Ingredients
  • 2 t. olive oil
  • 2 t. sesame oil
  • 2 t. soy sauce
  • 2 t. honey
  • 2 t. Sriracha sauce
  • 2 t. minced fresh garlic
  • 2 t. lemon zest
  • Salt and black pepper

Instructions
  1. In bowl, whisk together the olive oil, sesame oil, soy sauce, honey, Sriracha, ginger and lemon zest.
  2. Add salt and pepper to taste.
  3. Pour as much of the dressing you like over the warm veggies and toss. Add seasoning is needed. If you do not use all the dressing, serve on the side.
