Ingredients
  • 1 whole roasted chicken (store bought or home-made), deboned and shred or chop the chicken (need about 12-16 oz. of meat)
  • ½ red onion, chopped
  • ½ green apple, chopped
  • ½ red apple, chopped
  • ½ c. Craisins or dried cranberries
  • 12 green grapes, halved
  • 12 purple grapes, halved
  • ½ roasted almond slivers
  • 2 c. Greek plain yogurt
  • ¼ c. fresh lemon juice
  • Kosher salt, black pepper, garlic powder, to taste
  • Tabasco, to taste, optional

Instructions
  1. Remove the meat from the chicken (discard bones, skins, etc.).
  2. Shred the chicken or cut into bite size pieces and place in a bowl.
  3. Add to the chicken the red onion, apples, Craisins, grapes and almonds.
  4. Mix well.
  5. Add the lemon juice and mix again.
  6. Add the yogurt, ½ c. at a time, mix well. Keep adding until you get the consistency you like.
  7. Season with salt, pepper and garlic powder.
  8. Add Tabasco to taste if desired. Mix well.
  9. Serve stuffed in tomatoes or avocados or have a nice sandwich.
