Garlicky Grilled Sweet Potatoes

  • 6 large yams
  • Kosher salt
  • ½ c. olive oil
  • 8 garlic cloves, minced
  • 1 T. finely chopped fresh thyme leaves
  • ½ t. red chili flakes/black pepper/cumin
  • ¼ c. finely chopped fresh parsley

  1. Place yams in large pot of cold water. Season with 3 T. salt and cook until tender, but still firm. Takes 12-15 minutes. Drain and let cool slightly.
  2. Heat a grill to high (outside) or grill pan (inside).
  3. Heat 2 T. of olive oil in small sauté pan on the grill outside. Add garlic, thyme, chili flakes, pepper and cumin. Cook until garlic is just soft. Remove from heat.
  4. Slice each potato in half lengthwise, then slice each half into 3 or 4 wedges, depending on size.
  5. Brush the wedges with rest of olive oil and season with salt. Grill until lightly golden brown and just cooked through. This should take 6-8 minutes.
  6. Remove to a serving platter and toss with garlic sauce and chopped parsley. Add more seasoning if needed.
