Ingredients
  • 8 oz. semisweet chocolate chips
  • 1 ½ c. milk (skim, whole or 2 percent)
  • ⅓ c. unsweetened cocoa powder
  • 2-3 T. sugar
  • 1 t. vanilla
  • ¼ t. salt
  • 1 c. Greek yogurt (regular or 2 percent)

Instructions
  1. Put chocolate chips in a glass mixing bowl and set aside.
  2. Combine milk, cocoa powder, sugar, vanilla and salt in saucepan over medium heat.
  3. Whisk constantly until cocoa is dissolved and mixture comes to a simmer.
  4. Remove from heat and pour mixture over the chips.
  5. Let stand 5-8 minutes, then whisk gently until all chocolate is melted.
  6. Whisk in yogurt until smooth and blended, then cool completely.
  7. Divide mixture evenly among 8 popsicle molds.
  8. Place in freezer and leave until solid.
  9. Just before serving, briefly run molds under hot water to release the pops.

Notes
*****This will keep for about 1 month. You can experiment with different flavors of Greek yogurt and add pureed fruit or flavorings.
