Hot German Potato Salad
 
Hot German Potato Salad

Ingredients
  • 16 or 1 ½ lbs. new red potatoes
  • 6 slices bacon
  • ½ c. chopped celery
  • ½ c. chopped red onion
  • 1 T. flour
  • 1 T. sugar
  • 1 T. Dijon mustard
  • 1 t. salt
  • ½ t. celery seed
  • 1 t. white pepper
  • ⅓ c. water
  • ¼ vinegar
  • 1 bunch chopped green onions
  • 1 (2-oz.) jar sliced pimiento, drained

Instructions
  1. Cook potatoes in salted boiling water that covers them for 15-20 minutes or until tender. Drain and cool. Quarter each potato and set aside.
  2. Cook bacon in large skillet until crisp. Remove bacon and reserve 3 T. of drippings in skillet. Discard rest of drippings. Crumble bacon and set aside.
  3. Saute celery and onion in bacon drippings.
  4. Add flour and next 5 ingredients, stirring until smooth. Cook 1 minute, stirring constantly.
  5. Gradually add water and vinegar. Stir constantly, until mixture thickens.
  6. Stir in potatoes, green onions and pimento. Cook until just thoroughly heated. Stir to coat all the potatoes.
  7. Transfer to serving bowl. Sprinkle with bacon. Taste for seasoning.
